Sun Maid Raisins
Sun Maid Raisins are the veritable rock star as far as ingredients in dishes. In cookies, bread, bars, snacks or finger food, raisins can't be beat! Sautéed raisins are the best, especially in this recipe; I give it to you because it's the best treat I've ever ate and that's saying something! It's Zucchini Bread & the trick is soaking the raisins in water. Hydrate them. That makes them plump, adding to the delicious bite of that bread by your mouth. The bread stays moist because of it.
Ingredients:
2 cups raisins, 3 eggs & 3 cups of flour
1 cup water, 1 cup of oil & 1 tsp of salt
2 cups of sugar & 3 tsp of Cinnamon
2 cups of shredded zucchini & 1 tsp of baking soda
3 tsp of vanilla & ¼ tsp of baking powder
1 cup of nuts (Optional) & 1 tsp Nutmeg
Directions:
Preheat oven to 325°F. Place Raisins and Water in a shallow frying pan and simmer until all of
the water is absorbed. Set aside to cool. In a medium sized bowl combine Flour, Salt,
Cinnamon, Baking Soda, Baking Powder, and Nutmeg. In a separate bowl beat Eggs until
foamy. Add Sugar, Vanilla and Zucchini. In the same bowl add the flour mixture in small
amounts while stirring. Fold in raisins and nuts (if desired). Pour into 2 greased bread pans
and bake for 1 hour.
I like to bake this bread just a tad longer to make it crustier. I love a little bit of crust! Tasty, sweet, and buttery, if you want to add butter; this bread is great at room temp or hot and toasted!
